Since march 26, 2010 there is shared-mime-info 0.71-1ubuntu1 which recognizes the new mime type "video/mp2t" alias "mpeg 2 transport streams" (see bug #502642).
I successfully tested some mp2t streams in totem, xine, mplayer and vlc. Since these video players do support these streams, it should be added to their mimetype lists under "/usr/share/applications/${PLAYERNAME}.desktop" and to the default application list under "/usr/share/applications/defaults.list". Like for "video/mpeg" I'd expect totem to play "video/mp2t" by default.
