I have an epson tx700w printer with duplex module installed, however I no longer get an option to enable two-sided printing (the option is just greyed out) when looking at printer settings.

This seems to be specific to the escpr drivers, which for some reason don't seem to have access to any of the printer specific options such as media type, two-sided printing etc..
I also tested upstream 1.2.2 escpr driver and the same issue occurs. Using the gutenprint driver appears to work correctly.
