I agree that this should be fixed. However, if I've understood correctly, the non-minimized screen thumbnail is rendered from display adapter's memory and if the window is minimized, there's nothing in the display adapter's memory. So I'd assume that there does not exists an easy fix (a requirement for "one hundred paper cuts" project).
Perhaps compiz could save a screenshot of a window immediately before minimizing it and storing it somewhere for plugins to use?
