I created /etc/modprobe.d/alsa.conf containing:
options snd-hda-intel single_cmd=1 probe_mask=1 model=dell-headset-multi

Now it works fine, plug headset in, take it out no problem.

I don't know if the microphone works, but that's not a concern of me on this laptop.
