The ~/.appnamehere folders should already have restrictive permissions set by the applications. For example, ~/.mozilla is 700. If you use an application that doesn't set sane permissions for private data, please file a bug.
Any new folder you create in your home directory in OS X is automatically shared to other people, as the default umask on OS X is the same as Ubuntu.
What other folders do you want restricted by default? Documents, Music, Pictures, Videos? It seems to me those _are_ the folders you would want to share...
