This is not true of iOS. If I set auto lock to 'never' and then press the power button then the phone does lock.

I agree with Iain "I personally like the phone locking straight away when I press the power button." There should be a quick and easy way to lock your screen, should you not wish to wait 10 minutes (or whatever has been set) and the power button is a good way to do this.
