At this moment I'm quite sure that package in
/var/cache/apt/archives/grub2-themes-ubuntu-mate_0.3.7_all.deb
contains different .PNGs

Rebuilding package
$ apt-get source grub2-themes-ubuntu-mate
$ cd grub2-themes-ubuntu-mate-0.3.7/
$ debuild -uc -us
$ sudo dpkg --install ../grub2-themes-ubuntu-mate_0.3.7_all.deb
Produces a correct looking GRUB menu.
