Just tested, on my VM with Ubuntu 18.04, installing opera via snap works fine with simple mask "opera".
Process names are the same as in your situation, i.e. a simple mask of word "opera" suffices:

Please check once more, maybe there was a little typo in your mask previously, like an unwanted space somewhere or so.
