Mainly wrt Reply-To addresses: I think having such an amount of choices, so visibly, doesn't help people do the right thing. Most of the time, users should only have to choose "Reply" or "Reply All", (or "Reply to list"). Giving too easy access to other than Reply-To addresses will only lead to wrong choices. Maybe a sub menu of some kind...
Likewise "Followup-To", "Mail-Followup-To", "Mail-Reply-To" and other headers are designed to tell the mail client what to choose for a "Reply"/"Reply-To".
(I also suspect having the e-mail included in the menu item doesn't look good, especially when the address is a bit longer.)
