So I could definitely repro... first by manually inserting the copy middleware after encryption, then again by only having *one* proxy-logging middleware and letting auto-insertion do its thing (though at that point container listings were *also* broken, as I also let listing_formats get auto-inserted and it got inserted right of encryption as well, leading to a JSON decode error in symlink, just like in https://bugs.launchpad.net/swift/+bug/1806468).
