I have a bad solution but it works.
I installed the ubuntu 23.10 legacy version (from here : https://cdimage.ubuntu.com/ubuntu/releases/23.10.1/release/). It can detect the LVM volumes.

After that, I've forced the update version with this command :

sudo do-release-upgrade -d
