Same "The operation couldn't be completed. Input/output error" problem here.
Mine never succeeded in ripping even one single track, ever, either on internal drive or external media, either physical or networkd, either copy track or copy image.

Pity, there's a defined preference in using sbooth software when doing audio coding work that makes it first stop, always and anyway.

Any workaround?
