Default Pinta package in Ubuntu 11.04 was 0.6, see: http://packages.ubuntu.com/search?keywords=pinta&searchon=names&suite=natty&section=all

I can always reproduce the problem now on Ubuntu 11.10 just uninstalling Pinta v1.1 (version from PPA) and install Pinta 1.0 from official repository (remove PPA definition from sources).

But Pinta icon is displayed in Launcher (Unity 2D is the desktop environment that I am using).
