This has been fixed with 2578 <email address hidden> revision of stable addons.
You can set carrier from following two places which is further applied to stock picking carrier field.
1.Field name Delivery method which is many2one in Partner form =>Sales & Purchases Tab=>Deliveries Properties.
2.Field name Delivery method which is many2one in Sale order form=>Other Data tab.
