I don't think the delivery tab takes the UoM in concideration. Have you tried filling in the weight properties of the product on the "inventory" tab? When you do that, try a new sale order and see if the delivery acts correspondingly.

You can also see why this is in the delivery grid configuration. It can be based on weight but also weight*volume, both of which fields are available on the product tab.

Make sure you have technical features set to true on your user in order to see that tab.
