Tried the latest ubuntu-image 3.x. The issue is gone after replacing vfat in gadget.yaml with vfat-16.

Alfonso: This change[1] will require a recompilation[2] of ubuntu-image and also new snap-bootstrap in pc-kernel for all pieces to work.
