partially fixed by commit #4099 in base_external_referentials:

[IMP] base_external_referentials: partial fix for https://bugs.launchpad.net/magentoerpconnect/+bug/492885 ; now refreshing the mappings only reload mappings that comes from templates; other mappings (such as custom or Magento dynamically generated product attributes are kept intact)

Now, it's only about updating product attribute mappings when re-importing Magento attributes, a work that Sebastien Beau largely started and that will be integrated soon.

[FIX] fix for bug https://bugs.launchpad.net/magentoerpconnect/+bug/492885, properly recreate the mappings on Magento product attribute re-import, without the need to drop product.product fields and thus corrupt fields pointing to Magento options

BTW, if you need to fix your product attributes, what you can do is navigate the several Magento attributes in OpenERP, then note their ids (in the list view, in the GTK client they appear at the bottom of the screen), then edit the many2one attributes fields in the product.product object and change th attribute_id of the domain back to the correct id you noted. But this is just to fix an old database eventually, as I said the problem doesn't occur anymore now that we fixed that bug.
