Seems like the easiest workaround was to:
[root@generic-4 ~]# sed -i s/"GRUB_ENABLE_BLSCFG=.*"/"GRUB_ENABLE_BLSCFG=false"/g /etc/default/grub
[root@generic-4 ~]# grub2-mkconfig -o /boot/efi/EFI/redhat/grub.cfg
