I installed a kernel from Oneiric on my Natty system, and the s-video is working as well.

the installed kernel: 3.0-2-generic

I think this completely proves that the problem is in the Natty kernel and not in xserver-xorg-video-intel package. Please change the package that this bug is filed against...
