It's probably to be kind to those system that can't handle seeing lines starting with 'From' in the body, but I don't see this behaviour in other mail I get, so it doesn't seem to be that important. Quoting 'From' makes sense only for a client storing the message in an MBOX file, it probably shouldn't be done when sending a message.
