I'll add that Google Code also uses a version-controlled wiki. That is, the wiki data is placed inside the project's svn repository, and the actual rendered wiki always represents the latest version. Similar to what Lucas suggested, edits can be done via the web interface (which generates an automatic commit), or via version control checkout-edit-commit.
It would be very nice to see something similar in Launchpad.
