A bit different than a wiki but showing some advantages for some audiences:

Is there a way to contribute to launchpad docs via a repository of
rst/sphinx sources automatically built by LP into html on commit.

IMHO, ideally, Launchpad would get both: a wiki and a set of Sphinx
docs. Over the wiki, the Sphinx docs have the advantages to be managed
by a source system. Sources can be edited locally with one's prefered
editor usually more powerful than an in browser editor (think about
search/replace, or editiing multiple buffers concurrently). They can
be proposed as pull branch, etc...
