@Marc, in the latest development version (see http://inkscape.org/download/) the Gradient toolbar should now have all the functions of the Gradient dialog.
You can
* Select individual stops for colour editing (via the toolbar dropdown combobox and Tab key)
* Add and Remove stops (via the toolbar buttons and Insert/Delete keys)
* Precisely set the stop offset
* Change the repeat pattern
* Reverse the gradient, and
* Lock or unlock the gradient so that all related gradients are editing together or not

If you think there is some functionality in the Gradient dialog - that is not in the Gradient toolbar - we are happy to add it.
