There seems to be a small difference between the document structure of
a) export with option 'Convert text to paths'
b) menu 'Path > Object to Path' and then export
noticeable in the time the PDF viewer (here: Apple Preview.app) takes to render the PDF (somewhat slower for the 'export as t2p' than the 'o2p then export' variant) and in the total number of groups when opening the PDFs in Inkscape. I do not know if this has any relevance (as long as there are no apparent rendering or filesize differences).
