This is the dialog I'm launching, snapped from my Windows 7 box at home. There's two-ish dialogs you can launch with PrintDlg[A], this one is called the "Print Setup" dialog according to Microsoft.

This dialog only asks for, by default, the page size/source and orientation. These seemed like the most harmless options and, at least for me, the page size option maps well to the one in the Epilog printer settings dialog. (The source only has the option of "laser bed".) If I recall correctly the Epilog "printer" disabled the "landscape" option. You can modify it by supplying template information to make it look how you like, but I didn't feel the need. (Hence my "two-ish" above.) I've also disabled the "Network button" (don't know if that hurts anyone).

PrintDlg's other dialog is just the default "Print" dialog which asks about page ranges (all, current, specific pages), collation, etc. None of which apply to a vector output device like a laser cutter. It also has a "Print to file" checkbox.
