After installing mingw-w64-x86_64-gtk2 you can run the gtk-demo again:
- Open a MinGW shell (simply use the "MSYS2 MinGW 64-bit" shortcut)
- execute "gtk-demo" (it will be on your search path)
If it still crashes, then it's definitely an issue with gtk2...
