As Eva has indicated that the Z39.50 import interface has field labels in English (and always has), I have found out that these labels probably come from Z3950.pm (http://git.evergreen-ils.org/?p=Evergreen.git;a=blob;f=Open-ILS/src/perlmods/lib/OpenILS/Application/Search/Z3950.pm).

Example:
title => {code => 'title', label => 'Title'},

There seems to be no indication that the string should be translated.
