I was mistaken - the Applications/Office menu items install perfectly using the .deb files for OpenOffice 2.1. I had simply been too hasty before, and failed to look at the menus after I restarted my session.

I tried doing the installation again (going back to a ghosted image of Edgy w/ OpenOffice 2.04, using Synaptic to uninstall all OpenOffice 2.04 packages, and then "sudo dpkg -i *.deb" from the directory with the deb files), and this time, after I logged out and back in again, the Office menus are all correct, because one of the deb files is openoffice.org-debian-menus_2.1.6_all.deb, which installs the correct menu items.

When you uninstall OpenOffice 2.04, you also uninstall ubuntu-desktop. I have read that this will prevent an upgrade to Feisty. That is a price I am willing to pay to fix the font problems in OOo 2.04 in Edgy - I only do clean installs anyway.
