Well, in order to rule out some customization that might have caused
this, I revered to the default backup scheme and ran the test again.

No I didn't

In the two test I did (one again a few minutes ago), I let it create 3
volumes.

second time, after having it interrupted using the "restart later" option :

If you look at it closely, it uses the --no-encryption which was not the
case on the first pass.

Now I also ran a test using the "Remember password" option. This is the
'ps aux' output on the first run :

I don't seem to have any problem to reproduce the issue. If time
permits, I'll see if I can have it reproduced on a VM.
