I agree; this seems like something that curtin should be logging. I was able to hack the preseed to get curtin to include this in the install log, though. See the following branch:
If you want to see the contents of /etc/network/interfaces in the install output, you can hack /etc/maas/preseeds/curtin_userdata to include the same change.
