I'm having the same issue so I fill a report because didn't found this report before.
Although, pressing down the ALT key the text appear again but still dissapear after rollover the forward button.

It affects all the steps in the first setup, not only the email address step. If you hover the mouse over the fields or you press Alt, the fields appear again.

This is highly likely to be caused by compiz doing something with the labels (or just because effects are activated); opening a compiz task.

The effects are activated becuase that's the default installation for Ubuntu. Although I do switch to "Ubuntu Classic (no effects" at the logon screen and the bug persist. So that's mean is not a compiz bug, isn't?
I do notice that this bug is present only in my "first account setting" the one with the "Welcome screen" if I already have a account and I just add another one the bug is not present.
I hope all the above make sense my English is not that good.

I've just installed a fresh copy of Ubuntu 11.04 download today and I don't find the but reported previously. Maybe we can close this?

I upgraded to Ubuntu 11.04 from 10.10 yesterday. I didn't notice this problem in previous version but I have it in 11.04.

Yesterday I did a fresh install of 11.04 amd64 and I can confirm that the bug is still present in both Unity and Classic, with or without Compiz. Using Abe's Alt key tip, I managed to setup Evolution. Labels also disappear when adding a new account and resizing the Evolution Account Assistant window to a larger size (see attachment) using window edges or handle in the bottom right corner of the window.

Yes bug present when resizing the Evolution Account Assistant Window. Didn't test it early.
I am using a fresh install of Ubuntu 11.04 i386 and a intel integrated mobile graphic card.

bug #753667 seems similar, some users reported that their issue is happening due evolution-rss, do you have package installed?

I have the same problem evelution email address fields are all grayed out when I want to set up a new email account. I am running ubuntu 11.04 stable version.

Low seems a strange priority for a bug which prevents users from setting up an email account on the default installation.

Evolution is still supported and it's likely quite some users will keep running it, would it only be in business scenario where a calendar or exchange integration is required, we should fix that issue
