Bug Description
Seems like it might be a duplicate of Bug #2058133.
Update manager GUI no longer works after enabling Ubuntu Pro. Manually updating via CLI is fine. There seem to be other issues with the pro tools as well.

In case it is useful for anyone, running "snap remove canonical- livepatch" fixed the crash. It was this "canonical- livepatch" utility which was producing an error that cascades into the update-manager.
