Docs: Remove old docs from landing page

I think it's time we change the landing page for https://docs.evergreen-ils.org

We should make it land directly on our main documentation instead of forcing people to click on the 3.6 (HTML) link.

Before we do, we need to capture the deprecated versions of Evergreen documentation and bake them into the documentation. I'm planning on making a new page beneath the "appendix" called "Older docs".

We've already updated the docs server to make the antora documentation the landing page. Now I've created a page in our docs to link to "olddocs.evergreen-ils.org" (to be created)

Backported to through rel_3_10 and then got a merge conflict, which I think I know how to resolve but not tonight.

Fixed, or rather got around, the merge conflict and this is now backported through rel_3_8.
