That is probably why you are getting that error to begin with (you can run `nginx -t` to confirm). Disabling IPv6 is not considered a supported configuration change on Ubuntu so I'll mark the bug as invalid.

I believe you can simply fix the vhosts definitions by dropping the `listen` clauses mentioning an IPv6 (like [::]:80).
