web client: use defined list of column picker options

As discussed at the Evergreen hack-a-way, to avoid cluttering column pickers with too many options that are unlikely to be used in a particular grid, each interface should have a defined list of fields available in the column pickers. In addition to de-cluttering the options, this will also allow us to provide clearer labels in some options.

I'll be posting a collab branch shortly that starts this project.

Although this bug will ultimately help usability, I think we may want to hold off on merging any changes posted here until bug 1731278 gets addressed. Once we remove the column options based on IDL class, the sorting issue becomes worse.
