Bug Description
I recently found that GIMP, gThumb and gedit to name a few programs were showing hidden files no matter what I did. Even thought Nautlis and Thunar had the option unchecked.
Going to Ubuntu's Questions section, I searched for "hidden files" and found this at the top of the list:

When use the Open File command, my file list contains "hidden files" (those with a dot preceding the name). This is a nuisance. How can I turn this off?

There is a context menu on the file list inside the dialog. This context menu has an option "Show Hidden Files". The option persists between dialog summons, so you probably want to disable it from there.
* File->Open
* Right click in file list (right pane)
* Click "Show Hidden Files" to toggle the setting to off.
(Note this only applies if you have the option "Use OpenOffice.org dialogs" turned off under the general page in the settings).

I opened Writer and did what it suggested above.
I don't believe that OO's settings for hidden files should be felt system wide, and therefore submit it as a "bug".
If wrong, I'm sorry for wasting your time.

The change as to show hidden files or not affects the Gnome open dialog. Changing this in any application that uses the Gnome open dialog affects all other Gnome applications. For example show hidden files in gedit will cause the hidden files to show up in OpenOffice and vice versa. It is not a bug of OpenOffice as far as I can tell. The manner in which the document you quoted to enable/disable showing hidden files in OpenOffice is the same thing you would need to do to change it in gedit as well.
