What about complex applications like the GIMP? Those type of applications can never implement a one button menu and still be ergonomical and productive.
Look at what GNOME will do with the 3.4 version, they will implement a single button interface just like you proposed for the menu but they will also retain traditional menus for complex apps and not hinder the user's productivity.
