Are you saying that bluetooth is not currently included in the applet?
We don't package network-manager at the UGR project - we use the GNOME 3 team's builds. Their current build is 0.8.4, and we'll just have to wait for 0.9
The bluetooth icon is not handled by Network Manager. I checked the buildlog of gnome-shell in the ppa, I found that it is compiling without bluetooth support (check https://launchpadlibrarian.net/71225025/buildlog_ubuntu-natty-i386.gnome-shell_3.0.1-0ubuntu1~build1_BUILDING.txt.gz, search for 'bluetooth support'). So to integrate the network status icon, NM 0.9 is needed, and to get the bluetooth icon, the shell needs to be compiled with bluetooth support enabled.
