I don;t trust it and I want it gone.

Hello, you can apt purge and snap remove many of the things on your system. Of course, it might not work quite right afterwards but you can certainly customize it as you see fit.

Since ubuntu-desktop-minimal depends on update-manager, update-manager is indeed not removable on an Ubuntu desktop system.
