Changing default audio source changes the recording audio source

Expected Behaviour: When I start a recording with a specific audio source, changing the default audio source has no effect on the recording source.
Actual Behaviour: The audio source changes to the default one always, even if I specified one before.
So far I tried this using parecord and gstreamer. After I start a recording, if I go to Sound > Input and change the source in the "Record sound from" box, the recording source changes.
This happens even when I specify a device explicitly. Examples:
GStreamer: gst-launch-1.0 pulsesrc device=
pulse: parecord --file-format="wav" -d alsa_input.
In both cases, changing the source in the config changes the audio being recorded.
I thought this was a pulse issue, but changing the default source with pactl does not have this behaviour (and the change does appear in the sound control panel)
How to change the default audio source with pactl:
pactl set-default-source alsa_input.
I suspect this has something to do with how the control center changes the default audio source, so a clarification in how this happens could be very helpful.
