When on Hirsute with the new Samsung provided exfat support, gnome-disks can't create new exfat partitions due to being hardcoded to use the old mkexfatfs program from the exfat-utils package. Instead of the new mkfs.exfat from the exfatprogs package.
Hopefully it can detect either and use whichever is available.

- $ apt install exfatprogs
- start gnome-disks
- select the device or partition to format
- select other -> exfat as filesystem type
- confirm the format
-> the device should get formatted without error

The change is in the section defining the commands to use for exfat so limited to this filesystem. Check that changing label or formatting is working with exfatprogs but also keeps working with exfat-utils |
