Bug Description
On the final step of installation, the icon is missing (see attached). As suggested by Tim Lunn, this could be due to some custom icons that were added to gnome-icon-theme that are now not available in adwaita-icon-theme.

adwaita-icon-theme dropped support for legacy icons, these were a set of symlinks generated from the mapping in:
/usr/share/
So probably ubiquity is using one of these legacy icon names
