Perhaps GRUB can be made to work if you're lucky, but it's a race condition; XFS can't be forced to write data out to disk such that GRUB's later raw disk reads can get at it, except by unmounting and remounting the filesystem (which isn't feasible at that point in the installation). For some people it will work by chance, but those people are lucky.
