Bug Description

If you go to System -> Administration -> Time and Date you can pick you your timezone. The universal time zone, UTC, seems not to be listed there.

UTC is no the same as GMT (GMT might be bound to daylight saving times
while UTC is more static). That is, GMT is the time of Greenwhich, UTC
is universal (although they are the same most of the time, GMT might be
changed). Even then I couldn't find GMT on the list.

Well in Dapper they are listed as physical location - so GMT is listed as Europe/London (and other locations)

Of course the time in Greenwich is only GMT for 6 months of the year - the rest of the time it is GMT+1.

I think that the correct thing would be to say that the time code for Greenwhich is GMT (like the time code for Buenos Aires, Argentina, is ARS, etc) and GMT has daylight savings like other times. That is, GMT is UTC 6 months a year.

In the lastest development release - Intrepid Ibex - you select your timezone not directly but as a location. Hence, UTC is not in the list.

I'm confirming this regarding the previous comments. Importance should be changed to wishlist.
