To reproduce
Start Simple Scan from Applications/Graphics.
Starting Simple Scan appears in tray, then vanishes
Process monitory shows Simple Scan running, alternating states between sleep_on_page and sleep_on_page_killable
Memory used by Simple Scan creeps up to 4GB and overall system response becomes *very* sluggish.
Kill Simple Scan.

Was having the issue as well, and was just about to report my debug logs and such, but seems that the issue has disappeared after upgrading from simple-scan 3.10.0-0ubuntu1 to 3.10.2-0ubuntu1

I, too, have not seen the problem since updating. My current version is 3.12.1 which, oddly, says Copyright © 2009-2011 Canonical Ltd. Surely there's something in there more recent than 2011.
