You have replaced the official Ubuntu grub packages with incompatible builds that do not provide the functionality that shim depends on. This is not a bug in Ubuntu.

Good afternoon Steve,
Thanks for the feedback. I believe I forced the upgrade/installation for
the packages under packages list which were kept back, so I just learned
that I need to ignore them instead.

Do you know if there is any way to fix this output/issue?

Install the Ubuntu grub packages (grub-common, grub2-common) instead of the
Debian packages that you currently have installed.

provide me the remove/install commands and packages (step by step) in order
to avoid breaking something else?

to install the Ubuntu versions you should be able to run: sudo apt -f install grub-common/jammy grub2-common/jammy
