The error in your log is:

Setting up shim-signed (1.34.7+13-0ubuntu2) ...
Installing for x86_64-efi platform.
grub-install: error: cannot find EFI directory.
dpkg: error processing package shim-signed (--configure):
 installed shim-signed package post-installation script subprocess returned error exit status 1

Why do you have the shim-signed package installed? The error message shows you do not have an EFI system partition mounted at /boot/efi, and it appears your system is not in EFI mode.
