It appears I have found this bug from upstream? http://gnustep.8.n7.nabble.com/Missing-text-in-gui-apps-on-Kubuntu-td45447.html The thread comments on a patch they applied. Perhaps this patch could be applied to the version in 20.04

This was a bug in the gnustep-back library; All GNUstep GUI apps could be affected, not just PikoPixel.

It was fixed in January 2021, in gnustep-back 0.28.0-3:
