I retried the same and it worked fine for me.

ll /run/php/php7.2-fpm.sock
srw-rw---- 1 www-data www-data 0 Apr 24 13:35 /run/php/php7.2-fpm.sock=

The socket was created just fine.

Most often such issues are local config issues so I have to ask if you modified the config in a way that could affect this?
ALso if you upgrade the package again does this trigger every time?
