php-doctrine-cache: add nocheck and stage1 build profiles

Bug Description

In order to remove PHP5 from the archive, a set of build-dependency
loops need to be bootstrapped, in particular to not depend on phpunit.

This package is not progressing from xenial-proposed because its autopkgtests (debian/tests/control) still reference php5. Please take care to update debian/tests/control at the same time as debian/control.

I'll have a look at fixing this particular package now.
